Mom’s Old Fashioned Rice Pudding is a classic and comforting dessert that’s perfect for any occasion. Here’s a simple recipe to recreate this nostalgic treat:
Ingredients:
- 1/2 cup white rice (long-grain works well)
- 2 cups whole milk
- 1/3 cup granulated sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- Optional: 1/3 cup raisins
- Optional garnish: ground cinnamon
Instructions:
- Prepare the Rice:
- Rinse the rice under cold water until the water runs clear. This helps remove excess starch.
- In a medium saucepan, combine the rinsed rice with 1 cup of water. Bring to a boil over medium-high heat.
- Once boiling, reduce the heat to low and cover the saucepan. Let the rice simmer for about 15-20 minutes or until it’s tender and has absorbed most of the water.
- Make the Pudding:
- Once the rice is cooked, add the milk, sugar, salt, vanilla extract, cinnamon, and nutmeg to the saucepan. Stir to combine.
- If you’re using raisins, you can add them at this stage as well.
- Cook the mixture over medium-low heat, stirring frequently to prevent the rice from sticking to the bottom of the pan.
- Continue cooking for about 25-30 minutes or until the mixture thickens to your desired consistency. The rice should be creamy, and the pudding should coat the back of a spoon.
- Serve:
- Once the pudding reaches the desired consistency, remove it from the heat and let it cool slightly.
- You can serve the rice pudding warm, at room temperature, or chilled, depending on your preference.
- If desired, sprinkle a little extra ground cinnamon on top before serving for a decorative touch.
- Enjoy!
This recipe serves about 4-6 people, but you can easily double or triple the ingredients if you’re serving a larger crowd or want leftovers. Mom’s Old Fashioned Rice Pudding is delicious on its own, but you can also serve it with a dollop of whipped cream or a sprinkle of chopped nuts for added flavor and texture.
