Ingredients:
- 12 oz (340g) wide rice noodles (or any pasta of your choice)
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 8 oz (225g) Italian sausage, sliced
- 1 cup cherry tomatoes, halved
- 1/4 cup sun-dried tomatoes, chopped
- 1/4 cup fresh basil leaves, chopped
- Salt and black pepper to taste
- Grated Parmesan cheese for garnish
- Crushed red pepper flakes for garnish (optional)
For the sauce:
- 1/4 cup chicken or vegetable broth
- 1/4 cup white wine (such as Pinot Grigio or Sauvignon Blanc)
- 2 tablespoons balsamic vinegar
- 1 tablespoon soy sauce
- 1 tablespoon brown sugar
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/2 teaspoon red pepper flakes (adjust to taste)
- Salt and black pepper to taste
Instructions:
- Cook the rice noodles according to the package instructions until al dente. Drain and set aside.
- In a small bowl, whisk together all the sauce ingredients – chicken or vegetable broth, white wine, balsamic vinegar, soy sauce, brown sugar, dried oregano, dried thyme, red pepper flakes, salt, and black pepper. Set aside.
- Heat olive oil in a large skillet over medium heat. Add minced garlic and sliced onion, and cook until the onion is translucent, about 2-3 minutes.
- Add the sliced bell peppers and Italian sausage to the skillet. Cook until the sausage is browned and the peppers are tender, about 5-7 minutes.
- Stir in the cherry tomatoes, sun-dried tomatoes, and chopped basil leaves. Cook for another 2-3 minutes until the cherry tomatoes start to soften.
- Pour the prepared sauce over the sausage and vegetable mixture. Stir well to combine and allow the sauce to simmer for 2-3 minutes.
- Add the cooked rice noodles to the skillet. Toss everything together until the noodles are well coated in the sauce and heated through.
