Italian Drunken Noodles

Italian Drunken Noodles is a delicious and flavorful pasta dish inspired by the Thai dish, Pad Kee Mao, but with an Italian twist. Here’s a recipe to make Italian Drunken Noodles:

Ingredients:

  • 12 oz (340g) wide rice noodles (or any pasta of your choice)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 8 oz (225g) Italian sausage, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/4 cup fresh basil leaves, chopped
  • Salt and black pepper to taste
  • Grated Parmesan cheese for garnish
  • Crushed red pepper flakes for garnish (optional)

For the sauce:

  • 1/4 cup chicken or vegetable broth
  • 1/4 cup white wine (such as Pinot Grigio or Sauvignon Blanc)
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • Salt and black pepper to taste

Instructions:

  1. Cook the rice noodles according to the package instructions until al dente. Drain and set aside.
  2. In a small bowl, whisk together all the sauce ingredients – chicken or vegetable broth, white wine, balsamic vinegar, soy sauce, brown sugar, dried oregano, dried thyme, red pepper flakes, salt, and black pepper. Set aside.
  3. Heat olive oil in a large skillet over medium heat. Add minced garlic and sliced onion, and cook until the onion is translucent, about 2-3 minutes.
  4. Add the sliced bell peppers and Italian sausage to the skillet. Cook until the sausage is browned and the peppers are tender, about 5-7 minutes.
  5. Stir in the cherry tomatoes, sun-dried tomatoes, and chopped basil leaves. Cook for another 2-3 minutes until the cherry tomatoes start to soften.
  6. Pour the prepared sauce over the sausage and vegetable mixture. Stir well to combine and allow the sauce to simmer for 2-3 minutes.
  7. Add the cooked rice noodles to the skillet. Toss everything together until the noodles are well coated in the sauce and heated through.
  8. Season with salt and black pepper to taste.
  9. Serve the Italian Drunken Noodles hot, garnished with grated Parmesan cheese and crushed red pepper flakes if desired.
