Walking Taco Casserole

Ingredients:

  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 1 packet taco seasoning
  • 1 can (10 oz) diced tomatoes with green chilies, drained
  • 1 can (16 oz) refried beans
  • 1 cup salsa
  • 2 cups shredded cheddar cheese
  • 1 bag (1 oz) nacho cheese-flavored chips, crushed
  • Sour cream, diced tomatoes, chopped green onions, and sliced jalapeños for garnish

Instructions:

  1. Preheat Oven:
  • Preheat your oven to 350°F (175°C).
  1. Cook Ground Beef:
  • In a skillet over medium heat, cook the ground beef and chopped onion until the beef is browned and the onion is softened. Drain excess fat.
  1. Season with Taco Mix:
  • Add the taco seasoning and diced tomatoes with green chilies to the skillet. Stir to combine and cook according to the seasoning packet instructions.

  • Crush the nacho cheese-flavored chips and sprinkle them evenly over the cheese layer.

  • Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.
  1. Garnish and Serve:
  • Garnish the casserole with dollops of sour cream, diced tomatoes, chopped green onions, and sliced jalapeños.
