Melt in your mouth chicken

Here’s a simple recipe for melt-in-your-mouth slow cooker chicken:

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/2 cup chicken broth or stock
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • Optional: 2 tablespoons cornstarch mixed with 2 tablespoons cold water (to thicken the sauce)

Instructions:

  1. In a small bowl, whisk together the chicken broth, soy sauce, honey, olive oil, minced garlic, dried basil, dried oregano, dried thyme, salt, and pepper.
  2. Place the chicken breasts in the slow cooker insert and pour the sauce mixture over the chicken, ensuring it’s evenly coated.
  3. Cover the slow cooker and cook on low heat for 4-6 hours or on high heat for 2-3 hours, or until the chicken is cooked through and tender.
  4. Once the chicken is cooked, you can serve it as is, or if you prefer a thicker sauce, remove the chicken from the slow cooker and set aside. Pour the sauce from the slow cooker into a small saucepan. In a separate small bowl, mix the cornstarch with cold water until smooth. Gradually whisk the cornstarch mixture into the saucepan with the sauce. Cook over medium heat, stirring constantly, until the sauce thickens.
  5. Serve the chicken with the thickened sauce spooned over the top.

This melt-in-your-mouth slow cooker chicken is delicious served with rice, mashed potatoes, or your favorite vegetables. Enjoy!
