Crockpot Goulash Recipe:
Ingredients:
- 2 lbs beef stew meat, cubed
- 2 tablespoons vegetable oil
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 can (14 oz) diced tomatoes, undrained
- 1 can (6 oz) tomato paste
- 1 cup beef broth
- 2 teaspoons paprika
- 1 teaspoon caraway seeds
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 bell peppers, sliced
- 2 cups cooked elbow macaroni or your preferred pasta
Instructions:
- In a large skillet, heat vegetable oil over medium-high heat. Add the cubed beef and brown on all sides. Transfer the browned beef to the crockpot.
- In the same skillet, sauté the chopped onion until translucent. Add minced garlic and cook for an additional 1-2 minutes.
- Add tomato paste to the skillet and cook, stirring, for about 2 minutes.
- Transfer the onion and tomato paste mixture to the crockpot.
- Pour diced tomatoes, tomato sauce, and beef broth into the crockpot. Stir in paprika, caraway seeds, dried thyme, salt, and pepper.
- Cover and cook on low for 7-8 hours or until the beef is tender.
- About 30 minutes before serving, add sliced bell peppers to the crockpot.
- Cook pasta according to package instructions.
