- 1 lb (about 450g) fresh asparagus, trimmed and cut into bite-sized pieces
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup mayonnaise
- 1 clove garlic, minced
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- 1 cup breadcrumbs (optional, for topping)
Instructions:
- Preheat your oven to 375°F (190°C). Grease a baking dish.
- Bring a pot of water to a boil and blanch the asparagus for about 2-3 minutes. Then, drain and transfer the asparagus to an ice bath to stop the cooking process. Drain again.
- In a mixing bowl, combine the shredded cheddar cheese, grated Parmesan cheese, mayonnaise, minced garlic, Dijon mustard, salt, and pepper. Mix well until all ingredients are evenly combined.
- Add the blanched asparagus to the cheese mixture and toss until the asparagus is coated.
- Transfer the mixture to the prepared baking dish, spreading it out evenly.
- If you like a crunchy topping, you can sprinkle breadcrumbs over the top.
- Bake in the preheated oven for about 20-25 minutes or until the casserole is hot and bubbly, and the top is golden brown.
- Remove from the oven and let it cool for a few minutes before serving.
