Wet burritos are a delicious variation of traditional burritos where the assembled burritos are topped with a savory sauce and cheese, then baked until the cheese is melted and bubbly. Here’s a simple recipe to make wet burritos:


For the burrito filling:

  • 1 pound ground beef or turkey
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (14.5 ounces) diced tomatoes, drained
  • 1 cup cooked rice (optional)
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)

For the enchilada sauce:

  • 2 tablespoons olive oil
  • 2 tablespoons all-purpose flour
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried oregano
  • 2 cups chicken or vegetable broth
  • Salt to taste

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, cook the ground beef or turkey over medium heat until browned. Add diced onion, bell pepper, and minced garlic to the skillet and cook until the vegetables are softened.
  3. Stir in black beans, diced tomatoes, cooked rice (if using), chili powder, cumin, salt, and pepper. Cook for an additional 5 minutes, allowing the flavors to meld. Remove from heat.
  4. To prepare the enchilada sauce, heat olive oil in a saucepan over medium heat. Stir in flour, chili powder, cumin, garlic powder, and dried oregano. Cook for 1-2 minutes until fragrant.
  5. Gradually whisk in chicken or vegetable broth, stirring constantly to prevent lumps from forming. Continue cooking until the sauce thickens, about 5-7 minutes. Season with salt to taste.
  6. To assemble the wet burritos, spoon a portion of the burrito filling onto each flour tortilla. Roll up the tortillas, tucking in the ends, and place them seam side down in a baking dish.
  7. Pour the enchilada sauce over the assembled burritos, covering them evenly. Sprinkle shredded cheese over the top.
  8. Bake the wet burritos in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  9. Once baked, remove the wet burritos from the oven and let them cool slightly before serving.
  10. Garnish with your favorite toppings such as chopped fresh cilantro, sliced green onions, diced tomatoes, sliced olives, sour cream, guacamole, and salsa.
