Walking Taco Casserole

Here’s a recipe for a delicious Walking Taco Casserole:

Ingredients:

  • 1 pound (450g) ground beef
  • 1 small onion, diced
  • 1 packet (1 ounce) taco seasoning mix
  • 1 can (10 ounces) diced tomatoes with green chilies, drained
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 bag (9 ounces) corn chips (like Fritos)
  • 2 cups shredded cheddar cheese
  • Optional toppings: shredded lettuce, diced tomatoes, sliced black olives, sour cream, salsa, guacamole

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a large skillet, cook the ground beef and diced onion over medium heat until the beef is browned and the onion is softened. Drain any excess grease.
  3. Stir in the taco seasoning mix, diced tomatoes with green chilies, and black beans. Cook for an additional 2-3 minutes, until heated through.
  4. Crush the corn chips slightly in the bag, then spread half of them evenly over the bottom of the prepared baking dish.
  5. Spoon the beef mixture over the crushed corn chips in the baking dish, spreading it out evenly.
  6. Sprinkle half of the shredded cheddar cheese over the beef mixture.
  7. Layer the remaining crushed corn chips on top of the cheese layer, followed by the remaining shredded cheddar cheese.
  8. Cover the baking dish with aluminum foil and bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  9. Remove the foil and bake for an additional 5-10 minutes, or until the cheese is golden brown and the casserole is heated through.
  10. Serve hot, with optional toppings such as shredded lettuce, diced tomatoes, sliced black olives, sour cream, salsa, and guacamole.
