Ingredients:

  • 1/4 teaspoon dried oregano
  • 2 cups chicken or beef broth
  • Salt and pepper to taste

  • 10-12 corn or flour tortillas
  • 1 cup shredded Mexican blend cheese

Instructions:

  1. Prepare the Beef Filling: In a large skillet, cook the ground beef over medium heat until browned. Add the chopped onion and minced garlic, and cook until the onion is soft and translucent. Drain any excess fat from the skillet. Stir in the ground cumin, chili powder, paprika, salt, and pepper. If using black beans, add them to the skillet and stir to combine. Remove the skillet from the heat and set aside.
  2. Prepare the Enchilada Sauce: In a separate saucepan, heat the vegetable oil over medium heat. Stir in the flour and cook for 1-2 minutes to make a roux.
