  • 2 cups fresh strawberries, hulled and halved

  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup whole milk

For the Strawberry Mousse:

  • 1 cup strawberry puree (from the above ingredients)
  • 2 teaspoons gelatin powder
  • 3 tablespoons water
  • 1 1/2 cups heavy cream

1. Prepare Strawberry Puree:

  • In a blender or food processor, blend the fresh strawberries, sugar, and lemon juice until smooth. Strain to remove seeds if desired. Set aside.
