For the Chocolate Layer:

  • 1 cup (200g) granulated sugar
  • 1 cup (125g) all-purpose flour
  • 6 tablespoons unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (120ml) milk
  • 1/3 cup (80ml) melted butter
  • 1 teaspoon vanilla extract

For the Topping:

  • 3/4 cup (150g) granulated sugar
  • 1/4 cup (25g) unsweetened cocoa powder
  • 1 3/4 cups (420ml) boiling water

  1. Preheat your oven to 350°F (175°C). Grease a 9×9 inch (23×23 cm) baking dish.
  2. In a mixing bowl, combine the sugar, flour, cocoa powder, baking powder, and salt for the chocolate layer.
  3. Stir in the milk, melted butter, and vanilla extract until well combined. The mixture will be thick.
  4. Spread the chocolate batter evenly into the prepared baking dish.
  5. In a separate bowl, mix together the sugar and cocoa powder for the topping. Sprinkle this mixture evenly over the chocolate batter in the baking dish.
  6. Carefully pour the boiling water over the top of the batter and sugar-cocoa mixture. Do not stir.
  7. Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the top is set and the edges are bubbling.
  8. Remove the cobbler from the oven and let it cool for a few minutes before serving.
  9. Serve warm, preferably with a scoop of vanilla ice cream or a dollop of whipped cream.
