Seven Minute Frosting

Seven Minute Frosting is a light and fluffy frosting that’s perfect for topping cakes and cupcakes. Here’s a classic recipe to make it:

Ingredients:

  • 1 1/2 cups granulated sugar
  • 1/4 teaspoon cream of tartar
  • Pinch of salt
  • 1/3 cup cold water
  • 2 large egg whites
  • 1 1/2 teaspoons vanilla extract

Instructions:

  1. In the top of a double boiler or in a heatproof bowl set over a pot of simmering water, combine the granulated sugar, cream of tartar, salt, cold water, and egg whites.
  2. Beat the mixture with a handheld electric mixer on low speed until the ingredients are well combined.
  3. Increase the mixer speed to high and beat the mixture constantly while it sits over the simmering water. Be sure to beat it in a figure-eight motion to ensure even cooking.
  4. Continue beating the mixture for about 7 minutes, or until it becomes thick, glossy, and holds stiff peaks.
  5. Remove the frosting from the heat and stir in the vanilla extract.
  6. Immediately spread the frosting over the cake or cupcakes while it’s still warm, as it will set quickly.
  7. Allow the frosting to cool and set completely before serving or storing.
