Peach Cobbler Egg Rolls

Peach Cobbler Egg Rolls are a creative and delicious twist on traditional peach cobbler, combining the flavors of sweet peaches, warm spices, and crispy egg roll wrappers. Here’s a recipe to make them:

Ingredients:

  • 2 cups fresh or canned sliced peaches (drained if using canned)
  • 1/4 cup granulated sugar
  • 2 tablespoons brown sugar
  • 1 tablespoon lemon juice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 8 egg roll wrappers
  • 2 tablespoons melted butter
  • 1/4 cup granulated sugar (for rolling)
  • Vanilla ice cream or whipped cream, for serving (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. In a mixing bowl, combine the sliced peaches, granulated sugar, brown sugar, lemon juice, ground cinnamon, and ground nutmeg. Stir until the peaches are evenly coated in the sugar and spice mixture.
  3. Lay out one egg roll wrapper on a clean surface. Place about 2 tablespoons of the peach filling in the center of the wrapper, leaving space around the edges.
  4. Fold the bottom corner of the wrapper over the filling, then fold in the sides, and roll it up tightly like a burrito. Brush a little melted butter on the edges of the wrapper to seal it shut. Repeat with the remaining egg roll wrappers and peach filling.
  5. Place the sealed egg rolls on the prepared baking sheet, seam side down. Brush the tops of the egg rolls with the remaining melted butter.
  6. Sprinkle the tops of the egg rolls evenly with the remaining granulated sugar.
  7. Bake in the preheated oven for 18-20 minutes, or until the egg rolls are golden brown and crispy.
  8. Remove from the oven and let them cool slightly before serving.
  9. Serve the peach cobbler egg rolls warm, optionally topped with a scoop of vanilla ice cream or whipped cream.

Enjoy your delicious Peach Cobbler Egg Rolls as a fun and unique dessert!
