One-pot lasagna soup

One-pot lasagna soup is a delicious and convenient twist on traditional lasagna, perfect for a cozy weeknight dinner. Here’s a simple recipe to make it:

Ingredients:

  • 1 tablespoon olive oil
  • 1 pound (450g) ground beef (or Italian sausage for extra flavor)
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups beef or chicken broth
  • 1 can (8 ounces) tomato sauce
  • 1 tablespoon tomato paste
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon dried basil
  • Salt and pepper to taste
  • 8 ounces lasagna noodles, broken into small pieces
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil or parsley, chopped, for garnish (optional)

Instructions:

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the ground beef and diced onion. Cook, breaking up the meat with a spoon, until the beef is browned and the onion is softened, about 5-7 minutes.
  2. Add the minced garlic to the pot and cook for an additional 1-2 minutes, until fragrant.
  3. Stir in the crushed tomatoes, broth, tomato sauce, tomato paste, Italian seasoning, dried basil, salt, and pepper. Bring the mixture to a simmer.
  4. Once simmering, add the broken lasagna noodles to the pot. Cook, stirring occasionally, until the noodles are tender, about 10-12 minutes.
  5. Once the noodles are cooked, taste the soup and adjust the seasoning if necessary.
  6. Turn off the heat and stir in the shredded mozzarella cheese until melted and well combined.
  7. Ladle the lasagna soup into bowls and sprinkle each serving with grated Parmesan cheese.
  8. Garnish with chopped fresh basil or parsley, if desired.
  9. Serve the one-pot lasagna soup hot, with garlic bread or a side salad if desired.

Enjoy this comforting and flavorful twist on classic lasagna!
