Instructions:
1. Prepare the Crust:
- In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until the crumbs are evenly coated with butter.
- Press the mixture into the bottom of a 9-inch springform pan to form the crust. Use the back of a spoon or a flat-bottomed glass to compact it.
2. Make the Blueberry Sauce:
- In a saucepan, combine the blueberries, sugar, water, and lemon juice. Cook over medium heat, stirring occasionally, until the blueberries burst and the mixture thickens (about 8-10 minutes).
- Remove from heat and let it cool. Once cooled, you can either leave the blueberry sauce chunky or blend it for a smoother consistency.
3. Prepare the Cheesecake Filling:
- In a large bowl, beat the softened cream cheese until smooth.
- Add the powdered sugar and vanilla extract, and continue to beat until well combined.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until smooth and well combined.
4. Assemble the Cheesecake:
- Pour half of the cheesecake filling over the crust in the springform pan.
- Spoon half of the blueberry sauce over the cheesecake filling, swirling it with a knife or toothpick to create a marbled effect.
- Repeat the layers with the remaining cheesecake filling and blueberry sauce.
5. Chill:
- Refrigerate the no-bake blueberry cheesecake for at least 4-6 hours, or preferably overnight, to set.
6. Serve:
- Before serving, you can optionally garnish the top with additional blueberry sauce or fresh blueberries.
