  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped bell pepper (any color)
  • 2 cloves garlic, minced
  • 1/4 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • Cooking spray or oil for greasing muffin tin

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin with cooking spray or oil.
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, milk, grated Parmesan cheese, chopped onion, chopped bell pepper, minced garlic, ketchup, Worcestershire sauce, dried oregano, dried thyme, paprika, salt, black pepper, and eggs. Mix until well combined.
  3. Divide the meat mixture evenly among the prepared muffin cups, filling each cup to the top and pressing down gently to compact the mixture.
  4. Optionally, you can brush the tops of the meatloaf muffins with a little extra ketchup for added flavor.
  5. Bake the meatloaf muffins in the preheated oven for 20-25 minutes, or until cooked through and the tops are nicely browned.
  6. Remove the muffin tin from the oven and let the meatloaf muffins cool for a few minutes before serving.
  7. Serve the meatloaf muffins hot, either on their own or with your favorite sides such as mashed potatoes, steamed vegetables, or a fresh salad.

These meatloaf muffins are perfect for meal prep, kid-friendly lunches, or a quick and easy dinner option. Enjoy!
