General Tso’s Chicken

Ingredients:

For the chicken:

  • 1 lb boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 1 egg
  • 1/4 cup soy sauce
  • 1/4 cup cornstarch
  • Vegetable oil for frying

For the sauce:

  • 1/4 cup soy sauce
  • 1/4 cup hoisin sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons brown sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 1/4 teaspoon red pepper flakes (adjust to taste)
  • Sliced green onions for garnish

Instructions:

  1. In a bowl, whisk together the egg and soy sauce. Add the chicken pieces and toss to coat. Let marinate for at least 30 minutes in the refrigerator.
  2. In another bowl, mix 1/4 cup cornstarch with a pinch of salt. Dredge the marinated chicken pieces in the cornstarch mixture, shaking off any excess.
  3. Heat vegetable oil in a deep skillet or wok over medium-high heat. Fry the chicken pieces in batches until golden brown and cooked through, about 4-5 minutes per batch. Transfer to a paper towel-lined plate to drain excess oil.
  4. In a separate bowl, whisk together the soy sauce, hoisin sauce, rice vinegar, brown sugar, cornstarch, sesame oil, minced garlic, minced ginger, and red pepper flakes.
  5. Pour the sauce into the skillet and cook over medium heat until thickened, about 2-3 minutes.
  6. Add the fried chicken pieces to the skillet and toss until evenly coated with the sauce.
  7. Serve the General Tso’s Chicken hot, garnished with sliced green onions, and accompanied by steamed rice or your favorite side dish.
