For the Pastry:

  • 4 cups all-purpose flour
  • 1 cup (2 sticks) unsalted butter, cold and cubed

  • 1 lb (450g) beef steak, diced into small cubes
  • 1 large potato, peeled and diced
  • 1 large onion, finely chopped
  • 1 to 2 carrots, peeled and diced
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste
  • 1 teaspoon dried thyme or mixed herbs
  • Egg wash (1 beaten egg with a little water)


For the Pastry:

  1. In a large mixing bowl, combine the flour and salt. Add the cold, cubed butter.
  2. Using your fingertips or a pastry cutter, rub the butter into the flour until the mixture resembles breadcrumbs.
  3. Gradually add the ice water, a little at a time, and mix until the dough comes together. Be careful not to overmix.
  4. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

  1. Preheat your oven to 375°F (190°C).

  4. Fold the pastry over the filling to create a half-moon shape. Press the edges together and crimp to seal.
  5. Place the pasties on a baking sheet lined with parchment paper.
  6. Brush the tops of the pasties with the egg wash for a golden finish.
  7. Bake in the preheated oven for about 40-45 minutes or until the pastry is golden brown and the filling is cooked through.
