  • 1 lb boneless, skinless chicken breasts, cooked and shredded (about 2 cups)
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley (or 1 tablespoon dried parsley)
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • 1/4 cup all-purpose flour
  • 1 cup breadcrumbs (panko or regular)
  • Vegetable oil, for frying


  1. In a large mixing bowl, combine the shredded chicken, cheddar cheese, Parmesan cheese, parsley, garlic, salt, and black pepper. Mix well until all ingredients are evenly distributed.
  2. In a small bowl, beat the eggs lightly.
  3. Shape the chicken mixture into small patties or fritters, about 2-3 inches in diameter and 1/2 inch thick.
