Turtle Caramel Cake

A Turtle Caramel Cake is a decadent dessert combining the flavors of chocolate, caramel, pecans, and sometimes even a hint of vanilla. Here’s a recipe to make this delicious cake:

Ingredients:

For the cake:

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

For the caramel sauce:

  • 1 cup granulated sugar
  • 6 tablespoons unsalted butter, cubed
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • Pinch of salt

For the topping:

  • 1 cup chopped pecans, toasted
  • Additional caramel sauce for drizzling (optional)
  • Additional chocolate sauce for drizzling (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
  2. In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, buttermilk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed until well combined.
  4. Reduce the speed to low and slowly pour in the boiling water. Mix until the batter is smooth. It will be thin, but that’s okay.
  5. Divide the batter evenly between the prepared cake pans.
  6. Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  7. Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, transfer them to a wire rack to cool completely.
  8. While the cakes are cooling, prepare the caramel sauce. In a medium saucepan, heat the granulated sugar over medium heat, stirring constantly with a rubber spatula or wooden spoon. The sugar will start to form clumps and eventually melt into a thick, amber-colored liquid.
  9. Once the sugar is completely melted, add the cubed butter and stir until it is completely melted and incorporated.
  10. Carefully pour in the heavy cream while stirring constantly. The mixture will bubble up, so be cautious.
  11. Allow the caramel sauce to boil for 1 minute, then remove it from the heat.
  12. Stir in the vanilla extract and a pinch of salt. Let the caramel sauce cool for a few minutes before using it.
  13. Once the cakes have cooled, place one layer on a serving plate or cake stand. Spread a layer of caramel sauce over the top of the cake layer, then sprinkle with toasted pecans.
  14. Place the second cake layer on top and drizzle more caramel sauce over the top, allowing it to drip down the sides of the cake. Sprinkle with more toasted pecans.
  15. Optional: Drizzle additional caramel sauce and/or chocolate sauce over the top of the cake for extra flavor and decoration.
