Pico de Gallo

Pico de Gallo, also known as salsa fresca, is a delicious and refreshing Mexican salsa made with fresh ingredients. It’s perfect for dipping tortilla chips or as a topping for tacos, burritos, quesadillas, and more. Here’s a simple recipe for making Pico de Gallo:

  • 4 ripe tomatoes, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño pepper, seeds removed and finely chopped (adjust to taste)
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon fresh lime juice (about 1 lime)
  • Salt and pepper to taste

  1. In a medium-sized bowl, combine the diced tomatoes, chopped red onion, chopped jalapeño pepper, and chopped cilantro.
  2. Squeeze fresh lime juice over the mixture, and season with salt and pepper to taste.
  3. Gently toss all the ingredients together until well combined.
  4. Taste and adjust seasoning if necessary. You can add more lime juice, salt, or jalapeño for extra flavor.
  5. Cover the bowl with plastic wrap or transfer the Pico de Gallo to an airtight container and refrigerate for at least 30 minutes to allow the flavors to meld together.
  6. Before serving, give the Pico de Gallo a quick stir. Serve it as a dip with tortilla chips or as a topping for your favorite Mexican dishes.
  7. Enjoy your homemade Pico de Gallo!

Pico de Gallo is best enjoyed fresh but can be stored in the refrigerator for up to 2-3 days. Just keep in mind that the longer it sits, the more the flavors will meld together.
