For the pasta:

  • 2 cups all-purpose flour
  • 2 large eggs
  • 1/2 teaspoon salt
  • Water, as needed

For the sauce:

  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 onion, finely chopped
  • 1 can (28 ounces) crushed tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

  1. Make the pasta dough:
  • On a clean work surface, mound the flour and create a well in the center.
  • Crack the eggs into the well and add the salt.
  • Using a fork, gradually incorporate the flour into the eggs until a dough forms.
  • Knead the dough for about 5-10 minutes until it’s smooth and elastic. If the dough is too dry, add a little water, one tablespoon at a time.
  • Wrap the dough in plastic wrap and let it rest at room temperature for about 30 minutes.
  1. Roll out the pasta:
  • After the dough has rested, divide it into smaller portions.
  • Using a pasta machine or a rolling pin, roll out each portion of dough into thin sheets.
  • Dust the sheets with flour to prevent sticking.
