Fried Potatoes and Onions Peppers with Smoked Sausage

Ingredients:

  • 4 cups potatoes, peeled and diced
  • 1 onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 lb (450g) smoked sausage, sliced into rounds
  • 2-3 tablespoons vegetable oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish, optional)

Instructions:

  1. Prepare the Potatoes:
    • Start by peeling and dicing the potatoes into bite-sized cubes. Rinse them in cold water to remove excess starch and pat them dry with a paper towel.
  2. Sauté the Potatoes:
    • In a large skillet or frying pan, heat the vegetable oil over medium-high heat.

    • Add the thinly sliced onions and bell peppers to the pan. Sauté everything together for an additional 5-7 minutes until the vegetables are tender and slightly caramelized.
  6. Adjust Seasonings:
    • Taste the mixture and adjust the seasonings with more salt and pepper if needed. Feel free to add more paprika or garlic powder to taste.
  7. Serve:
    • Once everything is cooked to your liking, remove the pan from heat. You can garnish your fried potatoes, sausage, and peppers with some fresh chopped parsley if desired.
