Beef tips with mushroom gravy

here’s a simple and delicious recipe for beef tips with mushroom gravy:

Ingredients:

  • 1 1/2 lbs (680g) beef sirloin, cut into bite-sized pieces
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil, divided
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 8 oz (225g) mushrooms, sliced
  • 2 tablespoons all-purpose flour
  • 2 cups (480ml) beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon soy sauce
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. Season the beef tips with salt and pepper to taste.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or Dutch oven over medium-high heat. Add the seasoned beef tips in batches and cook until browned on all sides. Remove the beef from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of vegetable oil if needed. Add the chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for an additional minute until fragrant.
  4. Add the sliced mushrooms to the skillet and cook until they release their juices and start to brown, about 5-6 minutes.
  5. Sprinkle the flour over the mushrooms and stir to coat evenly. Cook for 1-2 minutes to remove the raw flour taste.
  6. Gradually pour in the beef broth, stirring constantly to prevent lumps from forming. Add the Worcestershire sauce, soy sauce, dried thyme, and dried rosemary. Bring the mixture to a simmer.
  7. Return the browned beef tips to the skillet, along with any accumulated juices. Stir well to combine.
  8. Reduce the heat to low, cover the skillet, and let the beef tips simmer in the mushroom gravy for about 30-40 minutes, or until the beef is tender and the flavors have melded together. Stir occasionally.
  9. Once the beef tips are cooked through and the gravy has thickened to your desired consistency, taste and adjust the seasoning with salt and pepper if needed.
  10. Serve the beef tips with mushroom gravy hot, garnished with chopped fresh parsley if desired. They pair well with mashed potatoes, rice, or egg noodles.

Enjoy your hearty and comforting beef tips with mushroom gravy!
