  • 1 pound ground beef
  • 1 packet of taco seasoning mix
  • 1 cup shredded cheese (such as cheddar, Monterey Jack, or a Mexican blend)
  • 8 large flour tortillas
  • Optional toppings: salsa, sour cream, guacamole, chopped tomatoes, chopped onions, chopped cilantro, jalapeños


  1. In a skillet over medium heat, cook the ground beef until it’s browned and cooked through, breaking it up into crumbles as it cooks.
  2. Drain any excess fat from the skillet, then add the taco seasoning mix and follow the instructions on the packet to season the beef. Usually, this involves adding water and simmering for a few minutes until thickened.
  3. Once the beef is seasoned, remove it from the heat and set it aside.
  4. Heat a separate skillet or griddle over medium heat.
  5. Place one tortilla on the skillet and sprinkle a handful of shredded cheese evenly over one half of the tortilla.
  6. Spoon some of the cooked ground beef over the cheese.
  7. Fold the empty half of the tortilla over the filling to create a half-moon shape.
  8. Cook the quesadilla for 2-3 minutes on each side, or until the tortilla is golden brown and crispy, and the cheese is melted.
  9. Repeat with the remaining tortillas and filling ingredients.
  10. Once all the quesadillas are cooked, remove them from the skillet and let them cool for a minute or two before slicing them into wedges.
  11. Serve the quesadillas hot with your favorite toppings on the side.
